TERRAINS
Hilly, with an average altitude of 230 metres above sea level, predominantly clayey-calcareous.
MARKETING PERIOD
January/February of the year following the harvest.
VINIFICATION AND REFINING
Brief cold maceration of the crushed grapes, soft pressing and fermentation at controlled temperature in stainless steel tanks.
ORGANOLEPTIC CHARACTERISTICS
Straw yellow color with greenish reflections. Delicate floral and citrus scent. Long persistence, freshness, harmony between flavor and acidity, with a slightly bitter finish.
FOOD PAIRINGS
Appetizers and raw fish, seafood first courses, boiled or grilled fish, delicate white meats. Excellent aperitif.
